November’s Cookies of the Month are Apple Pie, Pecan Pie and Pump!
Apple Pie Cookie:
My grandma always made the best apple pies from scratch. I figured there’s no better way to honor her Apple pie’s than to make an apple pie cookie. This cookie has a soft and chewy cinnamon dough with a homemade apple pie topping. These cookies can be enjoyed room temp, cold, or even warmed up for a few seconds in the microwave.
Pecan Pie Cookie:
Growing up my grandma always made at least a dozen pecan pies to take to family thanksgiving in West Virginia. We were always so confused why she needed to bring so many pecan pies. Well we found out she made so many because when she first brought one or two pies they would go missing before thanksgiving. Turns out people loved them so much they were taking whole pies to their cars to keep for themselves. After a few years of missing pecan pies, she started making enough for people to take home.
The Pecan Pie cookie is a shortbread cookie with my grandmas famous pecan pie filling on top. Chopped Pecans in a creamy and sugary mixture.
Pumpkindoodle:
Growing up pumpkin pie was never my thing (I think it was the texture). Man oh man I think this Pumpkin Pie Snickerdoodle has changed the game for me. A soft and chewy cinnamon, nutmeg, and pumpkin dough rolled in pumpkin spice sugar. Truly a game changer and perfect for the people who love pumpkin pie or who are like me and like the flavor of pumpkin pie but don’t like the texture.
